2-3 zucchini
1 c. Bisquick
3 eggs
1/2 c. Parmesan cheese
1 onion
1/2 c. oil
Pinch of parsley
Salt and pepper

Chop onion; peel zucchini and slice thin. Mix all ingredients in a large bowl until soft. Bake at 425 degrees for 1 hour.
