ZUCCHINI QUICHE 
2 tsp. Dijon mustard
4 tbsp. butter
4 c. sliced zucchini
1 c. chopped onion
2 tbsp. parsley flakes
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. basil
1/4 tsp. oregano
2 eggs, beaten
2 c. grated Mozzarella cheese
1 can crescent dinner rolls

In a skillet, melt butter. Add zucchini and onion. Saute and add spices.

In a large bowl mix wells, cheese, and finally add the vegetable mix.

Line a 9 inch ungreased pie pan with the rolls. Spoon on the mustard. Place egg mixture in pan. Bake 18-20 minutes at 375 degrees. Let stand 5 minutes before serving.
