CAULIFLOWER - CHEESE CASSEROLE 
1 tbsp. chopped onion
1/4 c. butter
1/4 c. flour
1 1/2 c. milk
3 eggs, separated
1 c. grated cheese
Dash each of salt and white pepper
1 head cauliflower, cooked and chopped
Paprika

Saute onion in butter. Blend in flour. Stir in milk. Cook over low heat until thickened, stirring constantly. Remove from heat. Stir a small amount of hot mixture into beaten egg yolks. Stir egg yolks in hot mixture. Stir in cheese, salt, and pepper. Fold in stiffly beaten egg whites. Place cauliflower in buttered 2 quart casserole. Pour sauce over top; mix lightly. Sprinkle paprika. Place casserole in pan of water. Bake at 325 degrees for 1 1/4 hours. Yield: 6 to 8.
