OVEN FRIED PARMESAN CHICKEN 
1 c. crushed herb seasoned stuffing
2 1/2 - 3 lbs. chicken breast or 2 1/2 - 3 lbs. broiler fryer, cut up
2/3 c. grated Parmesan cheese
1/4 c. fresh parsley, snipped or dried parsley
1 stick butter, melted

Combine crushed stuffing, cheese and parsley. Dip chicken in melted butter, then roll in stuffing mixture. Arrange skin side up on large shallow baking pan (don't crowd). Sprinkle remaining butter and crumbs on top. Bake in moderate oven, 375 degrees, 45 minutes or until tender. (Turning is unnecessary.) Makes 4 servings.
