ZUCCHINI CORN CASSEROLE 
3 zucchini, sliced thick
1 onion, chopped
2 c. frozen corn
1 c. mild Mexican salsa

Place 1/2 cup of water in large pot. Add onion and saute. Add zucchini, corn and steam about 10 minutes. Mix in corn and salsa then turn into a casserole dish. Bake at 400 degrees for 30 minutes. May top with low fat cheese.
