BROCCOLI-HAM SHORTCAKE 
1/4 c. butter
1/4 c. all-purpose flour
2 c. milk
4 oz. (1 c.) Cheddar cheese, cut in sm. cubes
1 (10 oz.) pkg. frozen chopped broccoli
8 oz. (1 1/2 c.) chunk of ham, cut in sm. cubes
1 (10 oz.) pkg. corn bread mix, prepared according to pkg. directions

Melt butter, over low heat, add flour and stir constantly until smooth and frothy. Let mixture bubble about 3 minutes, stirring often to prevent browning. Gradually stir in milk. Increase heat to medium and simmer, stirring often, about 5 minutes until thick and smooth. Add cheese, frozen broccoli and the ham. Cook, stirring until cheese has melted and broccoli is cooked. Cut corn bread into 4 equal pieces. Slice in half horizontally. Place bottoms on serving plates, top with half the sauce, then the remaining corn bread and remaining sauce. Makes 4 servings.
