BROCCOLI HAM ROLL UPS | |
2 (10 oz.) pkg. frozen broccoli spears, or fresh 2 tbsp. butter 2 tbsp. flour 1/4 tsp. salt 1/2 tsp. dry mustard 1 c. milk 1 c. sharp shredded cheese 6 slices ham, thinly sliced Preheat oven to 350 degrees. Cook broccoli according to package directions until tender. While broccoli is cooking, melt butter in a saucepan. Stir in flour, salt, and mustard. Gradually stir in milk. Cook, stirring constantly, until cheese is melted. Do NOT over cook. Divide broccoli spears into 6 portions, splitting large stalks as necessary. Alternate directs of flower ends within each portion. Place broccoli portions on a parallel to narrow end of each ham slice, extending flower ends over edges of ham. Roll as for jelly roll with broccoli in center of each roll up. Arrange roll up in a 9 x 12 inch baking dish with ham seam down. Pour sauce over roll ups. Bake until sauce is bubbly, about 20 minutes. VARIATION: Asparagus-Ham Roll Ups. Use 2 packages of frozen asparagus spears in place of broccoli. About 225 calories per serving. |
