LEMON CHICKEN 
3 tbsp. soy sauce
1 tsp. salt
1 tsp. pepper
3/4 c. oil
3/4 c. lemon juice
1 lemon peel
3 cloves garlic, crushed

Refrigerate the above ingredients overnight. Matzo meal to coat chicken Egg for batter 1/2 c. butter, melted

Dip cutlets in matzo meal. Dip cutlets in egg. Dip cutlets in matzo meal. Place in pyrex pan. Drizzle butter over chicken. Bake uncovered 20 minutes at 350 degrees. Turn chicken and add sauce from refrigerator. Bake 20 minutes. Place on platter with slivers of lemon peel for garnish.
