IRISH POTATO CANDY 
1 sm. Irish potato, boiled
1 tsp. vanilla
Powdered sugar
Peanut butter

Cook Irish potato until done; peel and mash. Add vanilla. Add all of the powdered sugar the potato will absorb. Spread out on waxed paper. Spread with peanut butter and roll up like jelly roll. Chill for at least 4 hours or overnight. Slice and keep refrigerated.
