MICROWAVE TURKEY LOAF 
1/4 c. finely chopped onion
1/4 c. finely chopped green pepper
1 garlic clove, minced
1/4 c. part skim ricotta cheese
1/8 tsp. salt
1/8 tsp. pepper
4 tomato slices
2 lg. pitted black olives, sliced (optional)
1 sm. jalapeno pepper, seeded and minced (optional)
5 oz. ground turkey
1 tsp. chili powder
1 tsp. chopped fresh parsley or parsley flakes
1 oz. Cheddar cheese, shredded

In medium microwave bowl, combine onion, peppers and garlic; cover with vented plastic wrap and heat 1 minute on high. Add turkey, ricotta cheese, chili powder, parsley, salt and pepper; mix well. Transfer mixture to microwavable roasting rack and shape into loaf; cover with vented plastic wrap and heat for 3 minutes on high. Rotate rack half turn, uncover and heat 3 minutes on high. Top with tomato slices; then sprinkle cheese; heat 1 minute on high until cheese melts. Top with olive slices.

Since microwave ovens vary in power, you may need to adjust your cooking time.
