MACARONI COTTAGE CHEESE BAKE 
1/4 c. butter
1/2 c. onion
1/2 c. celery
1 clove garlic
3 1/2 c. water
1 (6 oz.) can tomato paste
1 (7 oz.) pkg. macaroni, uncooked
2 tsp. salt, or as desired
1/2 c. parsley
2 c. cottage cheese
1/2 c. Parmesan cheese

Saute onion, celery and garlic in butter. Add water, tomato paste and macaroni. Simmer, covered for 25 minutes. Add parsley. Place macaroni mixture and cheeses in casserole in layers. Bake 15 minutes at 350 degrees. Serves 6.
