RENEE'S HOBO STEW 
1 can corned beef
2 to 3 lb potatoes
1 large yellow onion
1/2 cup (1 stick) butter
water, enough to cover
parsley flakes
salt and pepper, to taste

In a large skillet melt butter on low to medium heat. Add chopped yellow onion. Sauté gently for about 15 minutes.

Add corned beef, mashing gently with a fork to mix with the onion and butter. Peel potatoes and cube. Cover with water in a heavy bottom pot.

Add the onion/corned beef to the potatoes, bring to a slow boil until the potatoes are soft. Add parsley flakes, salt and pepper while this is cooking.

Easy... cheap... GREAT!
