MOMMA'S BEANS AND ESCAROLE SOUP 
1 (19 oz.) can of white kidney beans
1 head escarole
1 (8 oz.) can tomato sauce
Olive oil
Salt & pepper to taste
Water
Italian bread

Put beans (liquid and all) in large pot. Add 1 can of tomato sauce. Wash escarole thoroughly and boil in water until tender. Put escarole in bean mixture and using the same water it was boiled in, add water to bean mixture. Drizzle olive oil on top. Add salt and pepper. Simmer for about 1 hour on very low heat. Enjoy with Italian bread.
