APPLE, BLUEBERRY, WALNUT POUND
CAKE
 
3 c. flour
3 tsp. baking powder
1 c. oil
2 c. sugar
2 1/2 tsp. vanilla
1 tsp. salt
4 eggs
1/4 c. orange juice
1/2 c. nuts
3/4 c. blueberries
4 apples, diced

CINNAMON TOPPING:

2 tbsp. sugar
2 tsp. cinnamon

350 degrees 1 hour, grease and flour tube or Bundt pan.

Mix 3 cups flour, baking powder and oil. Add sugar, vanilla, salt, eggs, and orange juice. Put 1/2 batter in pan. Put 1/2 apples, then 1/2 blueberries, then 1/2 cinnamon topping then repeat layers. Last top with walnuts.

"Makes a nice cake anytime but especially in the fall" with fresh apples.
