NORWEGIAN APPLE CAKE | |
4 c. diced apples 1 1/4 c. sugar 1/2 c. light corn syrup 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 1/4 c. oil 2 lg. eggs 2 tsp. vanilla 1 c. chopped nuts Put diced apples in bowl. Sprinkle with sugar and drizzle syrup over them. Let stand for 1 hour. Sift flour, soda, salt and cinnamon together. In a large bowl, beat oil, eggs, and vanilla until foamy. Stir in apples and nuts. Add flour mixture. Stir until mixed thoroughly. Turn into a greased 9 1/2 x 13 1/2 x 2 inch pan. Bake at 350 degrees for 40 to 45 minutes. Serve warm or cold. |
