HARVARD BEETS 
1 can sm. whole beets or about 12 sm. beets cooked and cut
1/2 c. sugar
1/2 tbsp. cornstarch
1/4 c. water
1/4 c. vinegar
2 tbsp. butter

Mix sugar and cornstarch; add vinegar and water and boil 5 minutes. Add beets to hot mixture and let stand at least 30 minutes. Just before serving, bring to boiling point and butter.
