CHRISTINA'S CREOLE BAKED SALMON | |
Great with white or brown rice and a salad. 2 1/2 lb. salmon steaks (boneless optional) 2 tbsp. minced garlic, divided 2 tbsp. garlic powder, divided 1/2 tbsp. salt, divided 1/2 tbsp. pepper, divided 2 1/2 tbsp. Adobo seasoning, divided garlic powder, to taste 3 env. Sazon 1 medium onion, sliced 1 medium red pepper, sliced 1 medium green pepper, sliced 1 lemon, squeezed and cut in half 3 tbsp. olive oil Preheat oven to 375°F. Rinse salmon steaks, pat dry and set aside. In ungreased baking pan sprinkle 1 tablespoon minced garlic, 1 tablespoon garlic powder, 1/4 tablespoon salt, 1/4 tablespoon pepper and 1 tablespoon Adobo. Place salmon steaks into baking pan on top of seasoning (do not turn steaks over). Use the same ingredients on the other side of steaks. Poke holes into steaks with a fork and squeeze 1 half lemon over steaks and let sit. Meanwhile, in a medium bowl add sliced onions, peppers, Sazon, 1/2 tablespoon Adobo and garlic powder. Mix together and add over steaks. Squeeze other half of lemon and 3 tablespoons of olive oil over entire dish. Shake pan light until steaks moves (this ensures that the oil is under steaks). Cover with aluminum and place in 375°F oven for 1 hour or until inside of steaks turn white. Serves 4 to 6. Submitted by: Christina Brown |
