BLUEBERRY CREAM CHEESE MUFFINS 
2 cups all-purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup orange juice
2 tbsp. vegetable oil
1 egg
1 cup drained blueberries (fresh, frozen or canned)
1 (8 oz.) pkg. cream cheese

Preheat oven to 400°F.

In a large bowl, combine first 8 ingredients, mixing until all dry ingredients are moistened. Stir blueberries gently into batter. If you are using frozen berries do not thaw them first as your batter will turn all blue.

Fill 16 muffin cups 1/2 full. Cut cream cheese into 16 cubes. Push cream cheese cubes into the center of each cup of muffin batter. Cover with the remaining batter.

Bake at 400°F for 15 to 20 minutes or until golden brown. Serve warm!
