LIMA BEAN POT | |
2 c. (13 oz.) dried lima (butter) beans 1/2 tsp. salt Pepper 1 1/2 tbsp. brown sugar 1 med. onion, chopped 6 oz. salt pork, slice or ham with 4 tbsp. bacon fat added Wash and sort the lima beans, discarding any rotten or discolored ones and soak them for at least 12 hours or overnight. Cook them in the soaking water, or in fresh water, adding the remaining ingredients. Bring to a boil, reduce the heat and simmer until the beans are tender, occasionally stirring gently. The longer they cook the thicker the juice will be. Add water if necessary, but you want to keep a rich gravy-like consistency. Taste and adjust the seasonings as you go. Total cooking time should be 2 or 3 hours. |
