LIMA BEAN POT 
2 c. dried lima beans
1 1/2 lb. pork link sausage, cut into 1/2 inch pieces
1 lg. onions, chopped
1/2 c. celery, chopped
1 1/2 c. tomato juice
2 tbsp. brown sugar
1 1/2 tsp. salt
1 tbsp. chili powder
1/8 tsp. cayenne pepper

Cook beans as usual in 4 quart saucepan, about 30 minutes before serving time. Brown sausage in skillet. Pour off drippings in excess of 2 tablespoons. Saute onions, pepper and celery in sausage drippings. Add sausage mixture, tomato juice and salt, chili powder, and cayenne pepper to beans and cover to simmer slowly until serving time. Can be doubled for pot luck.
