ZUCCHINI BREAD 
3 eggs
1 c. Crisco oil
2 c. sugar
1 tsp. vanilla
2 c. peeled & shredded zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon sugar
1 c. nuts (opt.)

Beat eggs, sugar and oil. Add vanilla then stir in zucchini. Sift flour, salt, cinnamon, soda and baking powder. Stir into first mixture. Fold in nuts, if desired. Pour into 2 well greased 9"x5"x3" loaf pans. (Use Bakers Joy to grease pans.) Bake at 350 degrees for 60 to 75 minutes. Do not over bake.
