PANDORA ROAST BEEF | |
Small eye round roast, about 2 lbs. Seasoning to taste Do NOT preheat oven. Season roast all over with your favorite seasonings. (Don't use onion. Fresh onions or onion flakes would burn at the temperature used.) Be sure baking rack is in lower part of oven. Place roast in pan and put in cold oven, uncovered. Turn oven on and set at 500 degrees. Let roast cook for 15 minutes for each pound of weight. That's 30 to 35 minutes for this little roast. Do not open during this time. Turn heat off, but do not open oven door. Leave the roast in the oven without peeking, for 35 to 40 minutes. And now, at last you may open the oven and take out your roast. If you have been a good, patient, obedient cook, dutifully resisting the temptation to sneak a peek, your roast should be just about perfect. Incidentally, turning off your oven or burner and using residual heat to finish the cooking process is known in cooks' jargon as "coasting". |
