LUNCHEON SPECIAL 
2 pears
1/2 pt. fresh raspberries
1 c. Ricotta cheese
24 fresh almonds
1 head Bibb lettuce
Fresh mint

Halve pears, and remove center core. Wash berries. Arrange washed crisped lettuce on serving platter; center an unpeeled pear half in each leaf. Spoon 1/4 cup cheese into the center of each pear. Garnish with whole or slivered almonds (with the skin on). 4 servings.

FRUIT SALAD DRESSING:

1/2 c. salad oil (safflower, corn, avocado)
1/4 tsp. dehydrated orange peel (or fresh)
1/8 tsp. ground coriander
1 tbsp. toasted sesame seeds
1 tsp. honey
1 tbsp. frozen orange juice concentrate
2 1/2 tbsp. raspberry wine vinegar
