LUNCHEON SPINACH CREPES 
Any crepe recipe or:
1/2 c. milk
2 egg yolks
1/4 c. plus 2 tbsp. flour
Dash lemon rind
Salt & pepper

Make a clear very fine puree of spinach, add about 5 tablespoons spinach puree to the crepe batter, cook crepes. Lay on each crepe a very fine slice of ham, a sliver of fine gruyere cheese, roll and arrange the crepes in a buttered dish. Sprinkle with butter (butter) and grated cheese. The crepe batter can be also made with 1 whole egg and skim milk.
