LIZZY DICKERSON'S CARROT CAKE 
1 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2/3 c. vegetable oil
3/4 c. sugar
2 eggs, beaten
1/2 c. nuts
1 1/2 c. grated carrots

Sift flour, then measure. Resift with baking soda, baking powder, cinnamon and salt. Mix together vegetable oil, sugar and beaten eggs; add to dry ingredients. Then add nuts and grated carrots.

Bake in loaf pan at 350 degrees about 30 minutes or until center tests done. When you press lightly, it springs back or insert straw until it comes out clean. Can be doubled for tube pan.
