LEMON CHICKEN 
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
6 boneless chicken breasts
1/4 c. butter
1/4 c. lemon juice
8 oz. fresh mushrooms, sliced

Combine flour, salt and pepper in a plastic bag. Shake chicken pieces in flour mixture to coat. Brown in butter until golden. Add lemon juice and mushrooms. Reduce heat; cover and simmer 20 minutes or until tender. Serve over rice.
