LEMON CHICKEN 
4 boned chicken breasts
1 c. sliced mushrooms
1 tbsp. chopped green onion
4 tbsp. butter
1 lemon
2 tbsp. sherry

Brown chicken in butter until done. Saute mushrooms (add butter if necessary). Add green onions and half of lemon in thin slices. Add juice of other half of lemon and sherry. Simmer 2 minutes. Return chicken to pan and simmer, covered for 15 minutes. Serve with steamed rice and sauteed snow peas.
