MACARONI, CHEESE, AND TOMATO
BAKE
 
1/2 (16 oz.) pkg. corkscrew macaroni
2 tbsp. butter
2 tbsp. all-purpose flour
1 tsp. salt
1 1/2 c. milk
1 (8 oz.) pkg. American cheese slices, chopped
1/2 tsp. hot pepper sauce
2 lg. tomatoes, cut in chunks

About 1 hour before serving: Cook macaroni as directed; drain. Preheat oven to 350 degrees. Grease a 2 quart casserole. Meanwhile in 1 quart saucepan over medium heat into hot butter, stir flour and salt until blended. Gradually stir in milk and cook until thickened, stirring constantly. Reduce heat to low; stir in cheese and hot pepper sauce until cheese is melted. Place drained macaroni in casserole. Gently toss in tomatoes. Pour cheese mixture over macaroni. Bake 30 minutes until hot. Makes 5 servings.

Thanks you so much for this recipe. My mother used to make this and it is fantastic. No one in the family has this recipe and I have searched for years for it. It is simple, but a wonderful side dish.
