RABBIT CASSEROLE | |
1 young rabbit, cut in serving pieces 1/4 c. flour 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. marjoram 1/2 tsp. monosodium glutamate 6 slices bacon, cut in squares 4 med. potatoes, pared and sliced thin 2 sm. onions, sliced 2 bouillon cubes 2 1/2 c. hot water Dip rabbit pieces in a mixture of flour, salt, pepper, marjoram, and monosodium glutamate, and let stand for a moment. Fry bacon slowly until lightly brown, then remove from pan and pour off half the fat. Brown rabbit in remaining bacon fat, then transfer to casserole. Cover with potato and onion slices. Sprinkle lightly with remaining seasoned flour. Dissolve bouillon cubes in hot water and add to casserole. Cover and cook at 350 degrees for 2 hours. Remove cover for 15 minutes to brown. Serve with bacon. Serves 4-5. |
