SEROWIEC - LOPATA FAMILY
CHEESECAKE FROM POLAND
 
2 lbs. dry cottage cheese (use two 12-oz. cartons dry cottage and one 8-oz. pkg. Philadelphia cream cheese. The cheese should be sieved - use food processor blender.)
2 tbsp. flour
1 c. granulated sugar
1 tsp. salt
4 eggs, well beaten (use 5 if eggs are not large)
1 tsp. vanilla
1 pt. whipping cream, whipped (not too stiff)
3/4 lb. graham crackers, crushed
1/4 lb. butter, melted
1/2 c. granulated sugar

Combine sieved cottage cheese, flour, sugar, and salt; mix well. Combine eggs and vanilla. Eggs should be well-beaten! Add whipped cream, then add to cottage cheese mixture. Blend well.

CRUST:

Mix graham cracker crumbs, melted butter and sugar. Reserve 1 1/2 cups crumbs for topping. Press remaining mixture into 9x13 pan. Pour cottage cheese mixture over crust and sprinkle with reserved topping. Bake at 350 degrees for 1 hour. Cool in oven with door open for 50 minutes.
