CREAM OF ASPARAGUS SOUP 
2 c. cooked asparagus
2 c. asparagus water
3 c. chicken or meat stock
4 tbsp. butter
4 tbsp. flour
2 c. milk
Salt and pepper
1/4 onion, chopped

Cut tips off cooked asparagus and set aside. Combine rest of asparagus, cut in pieces, with the asparagus water, chicken stock and onion. Cook for 10 minutes. Rub through a sieve (or put in a blender). Melt butter, stir in the flour and blend well. Add the milk and the seasonings to taste and cook a few more minutes. Add the pureed asparagus tips and cook 5 minutes. Serve at once.
