ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. salad oil
1 tbsp. vanilla
2 c. flour
1 c. quick oats
1 tbsp. cinnamon
2 c. grated zucchini
1 c. chopped nuts

Beat eggs and sugar. Add salad oil and vanilla; blend well. Add flour, oats and cinnamon; blend. Add zucchini and chopped nuts. Bake in two greased loaf pans at 350 degrees for 45 minutes.
