MY "BEST" LEMON PIE 
5 tbsp. cornstarch
1 1/2 c. sugar
1/4 tsp. salt

Mix together. 5 tbsp. lemon juice Rind of 1 lemon (grated) 3 egg yolks (lightly beaten) 1 1/2 c. boiling water

Mix dry ingredients. Add 1/2 cup water. Mix. Add lemon juice, rind and egg yolks. Then stir this into the 1 1/2 cups boiling water. Cook until clear and thickened. Cool.

MERINGUE:

1 tbsp. cornstarch
2 tbsp. sugar
1/2 c. water

Cook until clear. Cool the mixture.

Beat the 3 egg whites until stiff with the cooled mixture. Then add 6 tablespoons sugar (gradually) as usual. Spread on pie. Bake 20 minutes at 325 degree oven.
