ASPARAGUS QUICHE 
1 cup asparagus, cooked & chopped
2 eggs, beaten
1/2 cup evaporated skimmed milk
1/8 tsp. fresh garlic, minced (or dash garlic powder)
Dash salt
Dash pepper
Dash onion powder
2 oz. low-fat Swiss cheese, shredded
2 tsp. mayonnaise
2 tbsp. Parmesan cheese, grated

Preheat oven to 375°F.

In small bowl, combine chopped asparagus, eggs, milk, garlic, salt, pepper and onion powder. Spray shallow 1-quart casserole with nonstick cooking spray. Pour egg mixture into casserole and sprinkle with Swiss cheese.

Bake at 375°F for about 35 minutes, or until inserted knife comes out clean.

In small bowl, combine mayonnaise with Parmesan cheese. Spread over quiche and return to oven until lightly browned, about 5 minutes. Remove and allow to set 10 minutes. Garnish with asparagus spears.
