CRUSTLESS ASPARAGUS QUICHE | |
2 tsp. butter, divided 1/4 c. chopped scallions, green onions 1 c. cooked chopped asparagus, 1/2 inch pieces 1/2 c. evaporated skimmed milk 2 eggs, beaten 2 oz. shredded Swiss cheese, divided 1/4 tsp. pepper Dash of salt Dash of ground red pepper Preheat oven to 375 degrees. In small skillet heat 1 teaspoon butter until bubbly and hot; add scallions and saute until softened. In medium bowl combine sauteed scallions with asparagus, milk, eggs, 1 ounce cheese, and the seasonings. Grease 7 inch pie plate with remaining teaspoon butter and pour in egg mixture; sprinkle with remaining 1 ounce cheese and bake for 35 minutes or until knife inserted in center comes out clean. |
