RAINBOW DIVINITY | |
3 c. sugar 3/4 c. light corn syrup 3/4 c. hot water 1/4 tsp. salt 2 egg whites 3 tbsp. dry Jello 1 tsp. vanilla 1 c. nuts Combine sugar, syrup, water and salt. Stir until it reaches boiling point. Cook to hard-ball stage (250 degrees). Meanwhile, beat egg whites to soft peaks, gradually add Jello beating to stiff peaks. Add vanilla and pour hot syrup slowly over egg white mixture, beating constantly at high speed until soft peaks form and mixture starts to lose its gloss. Stir in nuts. Drop from teaspoons on wax paper. |
