3 egg whites, room temp. 3 c. sugar 3/4 c. white syrup 1/4 c. water 1 tsp. vanilla Beat egg whites firm. Boil syrup to soft ball in water. Pour 1/3 over egg whites, beating as pouring in syrup. Boil remaining syrup to form a hard ball in water and pour over egg whites and beat. Remove beaters and fold to consistency of mashed potatoes. Put in buttered pan. Cut in squares. Store in air tight plastic sandwich bags. JELLO DIVINITY: Add Jello to firm egg white before adding syrup. |
