POTATO - CARAWAY - RYE BREAD 
1 env. dry yeast
1/3 c. warm water
2 tsp. salt
2 tbsp. melted bacon drippings or butter
2 tbsp. honey
1 tbsp. crushed caraway seed
2 c. warm fluffy mashed potatoes
3-3 1/2 c. all-purpose flour
1 c. graham or whole wheat flour
1 c. whole rye flour

Dissolve yeast in warm water in large mixing bowl. Stir in salt, bacon drippings, honey, caraway seed and mashed potatoes.

Follow mixing instructions for Basic White Bread recipe, adding all-purpose flour first. This mixture will not bubble. Add remaining flours for the second addition of flour. Proceed as instructed, using additional all-purpose flour for kneading. Brush hot loaves with melted butter. Cool. Yield: 2 loaves.
