RICOTTA CAKE 
1 box Duncan Hines yellow cake mix (without pudding)
3 eggs
2 c. ricotta cheese
1/2 c. sugar
1 tsp. vanilla
Powdered (10X) sugar

Preheat oven to 350 degrees. Grease and flour a 10-inch tube pan.

Prepare cake according to package directions, except use 2 eggs instead of 3. Pour into prepared pan.

Combine the ricotta, 1 egg, sugar, and vanilla. Spoon evenly over cake batter. Bake 55 to 60 minutes. Cool in pan. Turn out of the pan and invert onto serving plate so that the ricotta is on the bottom. Sprinkle top with powdered (10X) sugar.
