SHRIMP FAJITAS IN LETTUCE 
2 tbsp. minced green onions
2 tbsp. rice vinegar
1/4 c. soy sauce

FILLING:

1/2 lb. sweet Italian sausage, casing removed
1/2 green pepper, diced
1/2 red pepper, diced
1/2 lb. med. shrimp, peeled, deveined & diced
2 tbsp. grated ginger root
1/8 tsp. crushed red pepper flakes
20 radicchio leaves

Mix sauce ingredients. Set aside. In large skillet, over medium heat, saute sausage and green and red peppers 8 minutes or until browned. Break up sausage with a spoon. Stir in shrimp, ginger and pepper flakes; saute 2 minutes or until shrimp are cooked. Spoon about 2 tablespoons shrimp mixture in each radicchio leaf. To eat, roll radicchio around filling and dip in sauce. Makes about 20.
