SWEET POTATO SURPRISE CAKE 
1 1/2 c. cooking oil
2 c. sugar
4 eggs, separated
4 tbsp. hot water
2 1/2 c. sifted cake flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1 tsp. nutmeg
1 1/2 c. grated raw sweet potatoes
1 c. chopped nuts
1 tsp. vanilla

Combine oil and sugar. Beat until smooth. Add egg yolks and beat well. Add water and then dry ingredients that has been sifted together. Stir in potatoes, nuts, and vanilla. Beat well; beat egg whites until stiff and fold into mixture. Turn into 3 (8 inch) greased and floured layer cake pans (or 1 tube pan). Bake in 350 degree oven for 25 to 30 minutes (a bit longer if using tube pan). Cool and frost with the following frosting.

FROSTING:

1 stick butter
8 oz. size cream cheese
1 box white powdered sugar
2 tsp. vanilla
1 c. chopped nuts
Flake coconut
