TWICE BAKED POTATOES | |
4 sm. baking potatoes (5 to 6 oz. each) 2 oz. cream cheese, softened 2 tbsp. chives 1/4 tsp. basil crushed 1/8 tsp. salt 1/8 tsp. pepper 3 to 4 tbsp. milk Paprika Bake potatoes at 375 degrees for 40 to 50 minutes until tender. Cool slightly, cut potatoes in half lengthwise gently scoop out each potato half, leaving a thin shell, set shell aside. Mix pulp of potatoes, cream cheese, chives, basil, salt and pepper until smooth. Add milk 1 tablespoon at a time until fluffy. Pipe or spoon mixture bake into shells. Sprinkle with paprika. Place on baking sheet, cover loosely with foil. Bake 375 degrees for 10 minutes, uncover and bake 10 more minutes or until heated through. |
