CRANBERRY-ORANGE SALAD 
1 med. orange
1 1/2 c. raw cranberries
1 tbsp. sugar (optional)
1 pkg. (4 servings) sugar-free gelatin, red or orange flavor
3/4 c. boiling water
1/2 c. cold water
Ice cubes

Quarter the orange and remove any seeds and half of the rind. Combine orange, remaining rind and the cranberries in a food processor or food grinder and chop finely. Add sugar and set aside.

Dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin and stir until slightly thickened; remove any unmelted ice. Add fruit mixture. Pour into an 8 inch square pan or bowl and chill until set, about 2 hours. Cut into cubes or spoon onto salad greens. Yield: 6 servings.
