SWEET POTATO MUFFINS 
2 eggs, beaten
1 c. milk
1 c. cooked/canned, mashed sweet potatoes
1 1/2 c. all purpose flour
1 tbsp. sugar
5 tsp. baking powder
1/2 tsp. salt
1/3 c. melted shortening

Combine eggs, milk, and potatoes; beat until smooth. Combine dry ingredients, add to potato mixture, blending thoroughly. Add shortening, mix well.

Fill greased muffin pans two thirds full. Bake at 400 degrees for 30 to 40 minutes.
