SWEET POTATO MUFFIN 
1/2 c. butter
1 1/4 c. sugar
2 eggs
1 1/2 c. mashed potatoes
1 1/2 c. all purpose flour
1/4 tsp. salt
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. milk
1/2 c. raisins
1/2 c. pecans

Grease muffin pan. Cream butter and sugar. Add eggs, mix well. Blend in potatoes. Sift flour, baking powder, cinnamon, nutmeg. Add alternately with milk. Do not over mix. Fold in raisins and nuts.

Fill tins 2/3 full. Bake at 400 degrees for 25 minutes. Can be frozen.
