SWEET POTATO MUFFINS 
6 med. size sweet potatoes
1 c. sugar
1/2 c. milk
1/2 stick butter
Ground cinnamon to taste
Marshmallows, coconut, or pecans
1 tsp. salt
1 egg, slightly beaten

Peel potatoes, boil until tender. Remove from heat and drain well. Mash well. Add sugar, salt, milk, beaten egg, butter, and cinnamon. Mix well together and beat well. Take a muffin pan and lightly grease. Pour each hole about half full of potato mixture. Bake at 350 degrees for 20 minutes. Top with coconut or pecan halves or marshmallows and bake an extra 5 minutes. Serves 10.
