SWEET POTATO MUFFINS 
1/2 c. butter
1 1/4 c. sugar
2 eggs
1 1/4 c. mashed sweet potatoes (canned or fresh)
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. milk
1/4 c. chopped pecans
1/2 c. chopped raisins

Cream butter and 1/2 cup sugar, add eggs, mixing well. Blend in potatoes. Sift remaining sugar, dry ingredients and spices, and add alternately with the milk. Do not over mix. Fold in pecans and raisins. Fill greased muffin tins 2/3 full. Sprinkle with extra sugar. Bake in a 400 degree oven for 25 minutes. Turn out of tins and cool. Yield: 2 dozen.
