SWEET POTATO MUFFINS 
1 stick butter
1 1/4 c. sugar
2 eggs
1 1/4 c. mashed potatoes
1 c. milk
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. white raisins
1/4 c. chopped nuts

Preheat oven to 400 degrees. Grease muffin tins. Cream butter and sugar. Add eggs. Mix well and blend in sweet potatoes. Sift flour, baking powder, salt, cinnamon and nutmeg together. Add milk alternately with flour; do not over mix. Fold in nuts and raisins. Fill muffin tins 2/3 full. Bake at 400 degrees for 25 minutes or until done. Can be frozen.
