BLACKBERRY COBBLER | |
5 c. berries 1 1/2 tbsp. lemon juice 2 c. flour 3 c. sugar (divided) 1 c. milk 1/3 c. butter (softened in sm. pieces) 2 tsp. baking powder 1 tsp. salt (divided) 2 tbsp. cornstarch 1 1/2 c. boiling water Spread berries in well greased 2 1/2 quart shallow pan. Sprinkle with lemon juice, set aside. In medium bowl stir flour, 1 1/2 cups sugar, milk, butter, baking powder and 1/2 teaspoon salt until well blended. Batter will be thick. Spoon over berries, spread to edges of baking dish to seal. Set aside. In small bowl mix remaining sugar, salt and cornstarch. Sprinkle over batter. Pour boiling water over all. Bake 350 degrees for 1 hour or until glazed and golden brown. |
