CHICKEN SCALLOPINI IN SPAGHETTI
SAUCE
 
2 lbs. boneless, skinless chicken breast
2 1/2 c. spaghetti sauce
1 egg
3/4 c. Italian flavored bread crumbs
3 tbsp. vegetable oil
1 tsp. garlic, minced
10 slices Mozzarella cheese
Grated Parmesan cheese

Beat egg with a fork until white and yolk are blended. Sprinkle bread crumbs on a sheet of waxed paper. Dip chicken into egg and then roll in crumbs. Coat both sides of chicken.

In a large skillet heat oil with garlic over medium to medium-high heat. Add meat and saute 4 minutes on each side, until golden brown. Top each piece of meat with Mozzarella slice. Pour spaghetti sauce around meat. Bring sauce to a boil and reduce heat. Cover and simmer 5 minutes until cheese is melted. Sprinkle Parmesan on top.
